Millet (originally from East Asia) is produced by peeling proso millet. Then the millet is grind and the flour is naturally gluten free. Millet flour is a source of magnesium, phosphorus, potassium, iron, copper and zinc. It also contains vitamin B and fiber. Millet is an alkaline cereal. It can easily replace eggs and gluten. Millet flour is suitable for baking pastries, pancakes and biscuits or to thicken sauce.
